Sweet Potato Casserole

When I think of my family’s Thanksgiving food traditions, I automatically think of three staple foods: Green Bean Casserole, Sweet Potato Casserole and Ambrosia Salad. Those are the three foods I always make at Thanksgiving, no matter where we have our meal! I do make the green bean casserole many times throughout the year, in fact, we are having it today because it’s my daughter’s 14th birthday and she requested it. Now, the sweet potatoes and ambrosia I only make for Thanksgiving. I’m not sure why.   Maybe so we don’t get used to them and have it to look forward to on only one day per year.

I still have to shop for my ingredients. I’m crazy for not having gone to the grocery store yet! I’m sure the store won’t be too crazy, right??

I pulled my recipes out and plan to share them today. I will share on three separate posts starting with Sweet Potato Casserole on this post.

Ingredients:

2 big cans of sweet potatoes

1/4 cup sugar

2 eggs

1/4 cup milk

1 tsp. vanilla

1/2 cup margarine

1 cup coconut

1 tsp salt

Directions:  Mix altogether and put in casserole dish.  Cover with the topping.

Topping Ingredients:

1 cup chopped nuts

1/4 cup sugar

1 cup oats

1/2 cup butter

Mix together and place on top of casserole.

Bake at 350 for 30-45 minutes.

Enjoy!  I love this recipe!
