Egg Brunch Casserole

This is a picture I took in my crock pot.  Notice the egg yolk?  I apparently didn’t whisk my eggs enough and this came out on top!  I decided to keep it like that and see if it cooks through! It’s smells delicious!!

I thought today would be a good day to have a ‘breakfast’ dinner.  I found an easy recipe for an egg bake in the crock pot!  I threw it together this morning and forgot about it, besides smelling the scrumptious aroma filling the house!  My mouth is watering and I’m not sure I can wait until dinner to dive in!  But I must, since it needs to cook thoroughly!  I bought a honeydew, which I will cut up and we will have bagels with it too.  I enjoy having a ‘breakfast’ dinner once in a while!  Here’s the recipe:

12 eggs
8 bacon, strips
1 small onions, chopped
1 green pepper, seeded and chopped
1 clove garlic, minced
32 oz hash browns, frozen
1 1/2 cups cheese, shredded
1 cup milk
1 tsp dill weed
1/2 tsp salt
1/2 tsp pepper
Notes / Directions
Spray crock pot with oil.  Cook bacon until crisp, break into bitsSauteonion, garlic and pepperPlace 1/3 hash browns into bottom of crock potAdd 1/3 bacon, garlic and cheese

Repeat layer, ending with cheese

In large bowl add eggs, milk, dill, salt, pepper. Pour over everything else

Cover and turn on low

Cook for 8-10 hours

How easy is that?  Can’t wait to eat it!!

Today’s dinner agenda-Chili.  A nice BIG crock pot full.  I made the meat a couple of weeks ago and froze it until this morning.  I fried hamburger, green, yellow and red peppers, fresh minced garlic and chopped onions and placed it in a plastic container.  All I had to do this morning was take the meat out, thaw it a little, and open canned tomatoes and variety of beans.  I use dark red kidney, light red kidney, black beans and Great Northern beans.  I literally throw it all in the crock pot, put it on low heat and let it sit all day and cook!  I may add some Chili seasoning and red chili peppers as it cooks.  That’s it……soups on and in a matter of minutes!  That’s my kind of dinner!  We are having leftover Cole slaw from yesterday and home-made corn bread.  I will give the corn bread recipe on a separate post.

Here’s the Chili recipe:

1 lb hamburger
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
1 onion, chopped
4 cloves garlic, minced
2-3 canned tomatoes, 32 oz cans diced
2 cans great northern beans
2 cans black beans
2 cans red kidney beans
2 cans dark red kidney beans
2 cups shredded cheese
1 cup sour cream
Notes / Directions
Cook hamburger in olive oil. Add chopped peppers, onions, and minced garlic. Cook thoroughly.Open cans of tomatoes and beans and add to crock pot. Do not drain. Add chili seasoning and hamburger mixture when cooked.Cook in crock pot for 6 hours.Enjoy your day!
