Last night for dinner I found a recipe in a slow cooker cook book that I thought I would try. I threw it together in less than 10 minutes and have to say it was pretty tasty! I made a chicken and noodles recipe, but used mashed potatoes instead of noodles. Here’s the recipe:
3-4 lbs of boneless and skinless chicken
1 can of condensed cream of chicken soup ( I used cream of celery soup)
4 cups of chicken broth
1 package of wide egg noodles ( I skipped this part and made mashed potatoes)
Combine the soup and chicken broth in the slow cooker
Cut chicken into cubes (I cooked mine uncut) and add to slow cooker
I also added a bag of frozen peas to the slow cooker
Cook on low for 8-10 hours or high for 3-4 hours until is done
Add the noodles and cook for 30-45 minutes until noodles are tender (I didn’t add noodles, but I did add flour to thicken the broth up to make it thick like gravy for the mashed potatoes
Season with salt and pepper
That’s it! Easy isn’t it? This isn’t my picture because, again, I forgot to take one!

I hope you had a great weekend! I sure did! It was a beautiful, sunny weekend here in Michigan! We actually got to spend most of it together as a family, especially Sunday. We had not been to an apple orchard together as a family at all this year because of work and Nutcracker practice! It’s our favorite time of the year so we were a bit sad that we missed! So yesterday, after church, we headed out to one that was still open this late in the season. It was beautiful! The girls had fun feeding the animals and playing around. Time went way too quick and we are back to Monday and all the week entails! With that comes a new recipe I would like to share (actually two).
Today for dinner we are having Oriental Noodle Toss with Black Beans and Green Beans with Almonds and Bacon. The Oriental Toss is a new recipe for me so I am not sure we will like it! It sounds good, so I’ll give it a try!
Here’s the recipe:
1tbsp sesame oil
2 tbsp soy sauce
1/2 tsp ginger, fresh grated is best
8 oz spaghetti noodles
1 can black beans
, rinsed & drained
3 green onions, tops and bottoms chopped
1 pkg (10 oz) pea
pods or snow peas
Notes / Directions
Put a large pot of water on to boil.Stir together sesame oil, soy sauce and ginger in a medium-large serving bowl.As soon as water boils, stir in pasta and set timer for 6-9 minutes.Add to bowl the beans and onions.When timer sounds, add pea pods to boiling noodles for 1 minute. Drain. Toss with beans and sauce.

Tomorrow I am going to make crock pot lasagna. This is an easy, delicious meal for a cold, fall day. It is as simple as placing the items in the crock pot and forgetting about it for a few hours, though it will be hard to forget about because it smells so good! The first time I made it I thought it wouldn’t turn out. I thought the noodles would be hard and the taste bland. I was pleasantly surprised! It was very, very good! The noodles were soft enough and the taste was just right! This is one of the meals where I precooked the meat and sauce and placed it in the freezer. That makes it even easier on the day of preparation. I take it out of the freezer, let it thaw and place the items in the crock pot.
Here is the recipe:
2 lbs hamburger, fully cooked
2 jars marinara suce
1 box lasagna noodles, uncooked
2 lbs ricotta cheese
2 cups mozzarella cheese
1 egg, beaten
1 bunch spinach, fresh, baby
1 tsp Italian seasoning
Notes / Directions
Brown hamburger meat and add marinara sauce. Let simmer for 20 minutes. (You can also make your own marinara sauce).
While simmering, in a bowl combine your ricotta cheese, 1 cup of mozzarella cheese, and egg, Italian seasoning to taste and mix well.
Spray the crock with cooking spray, and start your layers of 1) meat sauce 2) uncooked lasagna noodles 3) ricotta cheese mixture 4) spinach.
Repeat layers one more time. Top with remaining meat sauce and mozzarella cheese.
Cook on low for three hours, any longer will overcook the noodles!
