Apple Torte

Well, today is Wednesday and tomorrow is Thanksgiving.  I guess I need to run to the grocery store!  Actually, I only need a couple of things.  🙂  Yesterday was busy with me taking my oldest to her co-op classes, doing school with the other three, exercising, piano lessons (at our house, which is SUCH a time saver and definitely worth the little extra $) and getting ready for my 12 year old’s Nutcracker performance.  She had to be downtown at the Opera House for Tech Rehearsal/costume fitting at 4:30 until 9:00 and I was helping out, so we had to gather everything she needed into a bag, like makeup, extra tights, hairspray (which I didn’t realize we were out of until then….too late…..hence one reason for having to run to the store today!), curling iron…etc.  We then ran out the door and had a fun, tiring evening!  AND….we get to do it again tonight!  It’s all fun and exciting though!  She is super excited to perform with professionals on a big stage!  She is an angel and her costume is beautiful.

On to a recipe!  I usually make another dish, specifically for my father-in-law because he loves it, for Thanksgiving, which I didn’t think about until last night!  This is a super easy recipe for an apple torte.  In no time at all, you have a sweet, piping hot, apple delight….add some whipped cream or vanilla ice cream (or both) and it’s a delicious treat!

Here’s the recipe:

2 eggs

1 cup sugar

2 tsp. baking powder

2/3 cup flour

1/2 tsp. salt

Beat it all together and add 2 cups of diced apples, 1 tsp. vanilla, 1/4 tsp. cinnamon and 1/2 to 1 cup of chopped nuts (if desired)

Bake at 350 for 40 minutes

Freezer Meal Day

I am not very good about keeping up with writing!  I can’t believe 3 weeks have gone by!  I have been keeping very busy.  Three girls are practicing for The Nutcracker they will perform in at the end of November and beginning of December.  One in our downtown Opera House and the other two with their studio (which they will be performing at their grandma and grandpa’s Living Community!).  They are super excited!  This is on top of their normal classes 5 times a week!  It’s all very exciting!

I basically ran out my freezer meal and started more.  I want to share how I do my meals.

I start out with an App on my iPhone called MealBoard.  I plan about 2-3 weeks of meals and then check my grocery list it generates for me to see which items I need to purchase.  Have I mentioned that I love this App?  I plan my meals according to the type of day I have.  On days that are particularly busy I plan a meal I can plop in the crock pot or pull out of the freezer and whip up quickly.  On days when I have more time, I may cook something that takes a little more effort (it may be a freezer meal but takes a little longer to cook up).

After  I check my list and see what I need, I then get my groceries and split up the cooking into sections and days.  I cook all the meat for the meals one day and then another day may cook the breakfast items.  One day I will cook the sides, etc.  I find this helpful and less tiring to split it up!  Yesterday I took a 6lb pork tenderloin and split it into 3 sections and froze them with a very good balsamic-rosemary marinade.  It’s really delicious!  I also made my taco meat, chili meat and meat with sauce for my crock pot lasagna (which is so tasty!!).  I also cooked up 4 lbs of bacon and then cooked hamburger on a cookie sheet for 18 minutes and cut them into squares for cheeseburgers the girls can warm up in the microwave.  Today I made 4 batches of cinnamon pancakes and 15 egg burritos.  Somehow I squeezed everything into my freezers!  I think I may have to break down and buy a chest freezer to have more room!  For the sides, it depends on what it is as to whether I make it up ahead of time.  Most of them can be made that day as I know I have the ingredients and can whip it together.  If you would like some of my recipes I use, check out my Pinterest page under Shelly Boynton.  I have accumulated a lot of recipes from there and AllRecipes.com and then from my own cookbooks!  If you would ever like some recipes i will be happy to share them!
